Zuma in Vail is seeking a dedicated Sushi Cook to join our kitchen team and uphold our high standards of Japanese cuisine. You will prepare sushi and sashimi with precision, portion seafood, and ensure freshness across all ingredients while maintaining a clean, organized station.

The role requires collaboration with a large kitchen team, flexibility to work evenings and weekends, and a passion for delivering exceptional dining experiences in a globally recognized brand environment.

Qualifications

• Experience as a Sushi Cook or Sushi Chef in a high-volume restaurant environment or sushi bar.
• Proficiency in sushi preparation techniques, including knife skills and seafood handling.
• Ability to work flexible hours, including evenings, weekends, and holidays.

Responsibilities

• Prepare sushi and sashimi dishes according to established recipes and plating standards.
• Handle and portion seafood, including slicing, filleting, and cutting fish for sushi and sashimi.
• Ensure freshness, quality, and proper storage of all seafood and ingredients used in sushi preparation.
• Follow recipes and plating guidelines to ensure consistency and accuracy in sushi preparation.
• Maintain cleanliness and organization of the sushi station, including equipment, tools, and work surfaces.
