Qualifications

• Must have minimum 2+ years of professional sushi experience in a high-volume, upscale dining environment.
• Extensive knowledge of sushi preparation, traditional techniques, product quality, and proper ingredient handling.
• Strong knife skills with ability to fabricate fish, portion accurately, and work with precision and speed.
• High attention to detail with a commitment to cleanliness, organization, and presentation.
• Excellent communication and interpersonal skills; able to engage guests and team members.

Responsibilities

• Prepare a full range of sushi offerings (sashimi, nigiri, maki) with precision and consistency.
• Fabricate and portion fish accurately; ensure freshness and proper handling.
• Maintain a clean, organized, and fully stocked sushi station.
• Adhere to food safety, health, and sanitation guidelines.
• Monitor product levels, assist with inventory, and communicate ordering needs.
• Collaborate with the kitchen team and leadership for seamless service.
• Participate in creation of new menu items and seasonal offerings.
• Engage with guests, sharing product knowledge confidently.
• Support opening, mid-shift, and closing duties for the station.
• Attend food, wine, and team training opportunities.
