Qualifications

• Minium 3 years sushi experience preferred.
• Strong knife skills and fish fabrication expertise.
• Skilled in nigiri, sashimi, maki preparation.
• In-depth knowledge of fish handling, storage, sanitation, and food safety.
• Attention to product quality, portioning, and presentation.
• Maintain speed and accuracy during high-volume service.
• Collaborative, professional team player with good communication.
• Upscale or fine-dining Japanese restaurant experience preferred.

Responsibilities

• Prepare high-quality sushi and sashimi to established standards.
• Fabricate fish and manage daily rotation and storage.
• Set up/break down sushi station with cleanliness and organization.
• Produce nigiri, sashimi, and maki with precision.
• Monitor freshness, quality, and sanitation throughout service.
• Engage with guests at the sushi bar, delivering hospitality and knowledge.
