The Sushi Chef de Partie with F&B 575 in Nama at Aman New York is responsible for managing the daily operations of a specific station, with an understanding of other kitchen stations. The role involves preparing high-quality food that meets company standards, ensuring the station remains clean and well-stocked.

Key Responsibilities
  1. Maintain operations of your assigned station.
  2. Assist in daily prep and other tasks assigned by the Sous Chef and Chef de Cuisine.
  3. Check and complete mis en place, pars, and set up station using proper recipes and fresh products.
  4. Read and interpret all incoming dupes correctly.
  5. Communicate with the Sous Chef and Chef de Cuisine regarding menu items, issues, or shortages.
  6. Accommodate guest requests, ensuring the Sous Chef or Chef de Cuisine is informed to maintain standards.
  7. Use standard recipes and plate presentations to ensure quality and consistency.
  8. Monitor stock levels and communicate shortages to the team.
  9. Maintain professional relationships with all staff and guests.
  10. Store items properly at the end of each shift, labeling and dating products.
  11. Keep a clean, organized, and neat work area.
  12. Conduct oneself professionally to reflect the company's high standards and encourage colleagues to do the same.
  13. Perform other tasks or projects as assigned by management.
Required Experience and Qualifications
  • Culinary degree and/or equivalent practical experience, preferably in a Japanese fine dining restaurant.
  • Flexibility to work shifts, including weekends, nights, and holidays.
  • Strong teamwork and communication skills.
  • Food Safety certification.
  • Organized, able to manage time effectively, and work independently.
  • High attention to detail.
  • Sensitivity to cultural nuances.
  • Ability to handle multiple tasks in a fast-paced environment.
  • Maintain a professional appearance per company policies.
  • Ability to stand for extended periods.
  • Capability to carry, push, and pull up to 30 lbs; including standing, bending, and lifting.
  • Multilingual skills are a plus.
