Job summary

NINENINE GROUP LLC in Palm Springs, CA is seeking a Sushi Chef to join our fast-paced kitchen. You will expertly cut, slice, fillet raw fish, prepare rice, and assemble rolls while maintaining high standards of quality and presentation.

You will design dishes, manage stock and hygiene, train apprentices, and interact with guests to enhance their dining experience. Applicants should have knife skills, deep knowledge of Japanese cuisine, prior sushi-chef experience, stamina to stand long shifts,

Qualifications

• High-level mastery of Japanese knives to prepare raw fish.
• Deep understanding of Japanese cuisine, ingredients, and flavor profiles.
• Previous experience as a sushi chef or in a similar role.
• Ability to stand for long periods and work in a fast-paced environment.
• Meticulous approach to food safety, quality, and presentation.

Responsibilities

• Food Preparation: Expertly cutting, slicing, and filleting raw fish, preparing sushi rice with proper vinegar balance, and assembling sushi rolls.
• Menu & Quality Control: Designing, preparing, and presenting sushi dishes that meet quality, portion, and aesthetic standards.
• Inventory & Hygiene: Managing stock levels, ordering ingredients, and strict adherence to food safety, sanitation, and health regulations.
• Customer Service: Preparing dishes in front of guests, customizing orders based on preferences, and interacting with customers to enhance their experience.
• Kitchen Management: Training apprentices/helpers, cleaning workstations, and ensuring the sushi station is organized.

RATE : Rates range from $20/hr plus commission , which can add up to approximately $40-$50++/hr.
