Position Overview

The Steward/Potwasher/Warewasher is responsible for maintaining cleanliness and proper storage of china, glass, and silverware, ensuring sanitation standards. Assists kitchen staff with cleanliness of kitchen and storage areas, equipment, and proper food storage and rotation.

Responsibilities

1. Maintain cleanliness and orderliness in kitchens, back dock, dumpster, and utility areas.
2. Heavy-duty cleaning of ovens, grills, sinks, walls, floors, and refrigerators.
3. Wash pots, pans, and utensils following proper sanitation procedures.
4. Sweep, mop, and wash floors in food and beverage areas.
5. Report shortages of equipment and supplies to management.
6. Operate dishwashing equipment to ensure thorough cleaning and sanitation.
7. Return clean china, glass, and silverware to proper storage, minimizing breakage.
8. Handle chemicals safely and properly.
9. Report faulty equipment immediately.
10. Empty garbage into the hotel dumpster.
11. Know the location and operation of fire extinguishing equipment.
12. Practice safe work habits to prevent injuries.
13. Follow procedures for cleaning and reassembling kitchen equipment.
14. Follow sanitation standards.
15. Assist in setting up and breaking down the restaurant buffet.
16. Support banquets by supplying china, glass, and silverware as needed.

Qualifications

• High school diploma or equivalent preferred; hotel or related experience beneficial.
• Flexible with hours, including potential for long shifts.
• Ability to exert up to 100 pounds of force occasionally, and 50 pounds frequently.
• Ability to stand throughout the shift.
• Ability to withstand temperature variations.
