Job summary

Marcus Hotels & Resorts is seeking a Sous Chef at Mason Street Grill in Milwaukee to lead the kitchen team, ensure food quality and presentation, and collaborate with the Executive Chef to deliver memorable guest experiences.

Qualifications

• Minimum 2–3 years of culinary experience in a hotel, resort, or upscale dining environment with supervisory responsibility.
• High school diploma or equivalent; culinary degree or formal training preferred.
• Solid knowledge of food products, preparation techniques, and kitchen standards.
• Basic understanding of food and labor cost awareness and the ability to support cost‑control efforts.
• Effective communication, teamwork, and organizational skills.
• Ability to work a flexible schedule, including evenings, weekends, and holidays.

Responsibilities

• Supervise daily line operations to ensure consistency, quality, and exceptional execution.
• Prepare menu items to exact recipe and presentation standards for restaurant and private dining.
• Train, coach, and guide culinary staff to support performance, growth, and teamwork.
• Oversee ordering, receiving, storage, rotation, and inventory to maintain freshness and minimize waste.
• Ensure all equipment and work areas meet strict cleanliness and sanitation standards.
• Contribute to menu development, special requests, and other assigned culinary duties.
