Job summary

Marcus Hotels & Resorts’ Mason Street Grill in Milwaukee seeks a Sous Chef to support the Executive Chef, train and supervise the kitchen team, and ensure food quality, consistency, and presentation meet the highest standards.

Work in a vibrant, upscale dining environment at the Pfister Hotel with opportunities across Marcus’ luxury portfolio and career growth across multiple properties.

Qualifications

• High school diploma or equivalent required; culinary degree or formal training preferred.
• Minimum 2–3 years of culinary experience in a hotel, resort, or upscale dining environment with supervisory responsibility.
• Solid knowledge of food products, preparation techniques, and kitchen standards.
• Ability to support cost-control efforts and manage labor costs.

• Supervise daily line operations to ensure consistency, quality, and exceptional execution.
• Prepare menu items to exact recipe and presentation standards for restaurant and private dining.
• Train, coach, and guide culinary staff to support performance, growth, and teamwork.
• Oversee ordering, receiving, storage, rotation, and inventory to maintain freshness and minimize waste.
• Ensure all equipment and work areas meet strict cleanliness and sanitation standards.
• Contribute to menu development, special requests, and other assigned culinary duties.

As Sous Chef at Mason Street Grill, you will train, mentor, and supervise our kitchen team while ensuring that food quality, consistency, and presentation reflect the highest standards. What you will be doing:

Position Requirements:

• High school diploma or equivalent required; culinary degree or formal training preferred.
• Minimum 2–3 years of culinary experience in a hotel, resort, or upscale dining environment, with supervisory responsibility.
• Solid knowledge of food products, preparation techniques, and kitchen standards.
• Basic understanding of food and labor cost awareness and the ability to support cost‑control efforts.
• Effective communication, teamwork, and organizational skills.
• Ability to work a flexible schedule, including evenings, weekends, and holidays.
