Job summary

Mason Street Grill in downtown Milwaukee, part of Marcus Hotels & Resorts, is seeking an experienced line cook to join a high‑volume kitchen famed for wood‑grilled steaks, seafood, and live jazz. You will execute complex dishes, maintain standards, and contribute to a polished guest experience.

Qualifications

• Minimum of 3 years of progressive culinary experience in high-volume environments (hotel/steakhouse/fine dining).
• Advanced knowledge of food preparation techniques, knife skills, food safety, and HACCP standards.
• Ability to lead stations independently, prioritise tasks, and maintain quality during peak service.
• Strong teamwork and mentoring skills to support junior cooks.

Responsibilities

• Prepare and execute complex menu items while upholding Mason Street Grill's standards.
• Lead assigned kitchen stations, coordinating production and workflow for fast-paced service.
• Monitor quality, portion control, and product usage while maintaining standards.
• Train, coach, and mentor less experienced cooks to foster a professional kitchen culture.
• Ensure compliance with food safety, sanitation, and health regulations.
