Job summary

UNC Health Care in Raleigh, NC is seeking a sous chef to assist the executive chef across all production areas. You will ensure recipes are followed, sanitation codes are met, and lead the kitchen in the executive chef's absence.

You will monitor ticket times and patient and retail meal prep, enforcing hospital policies. The role requires at least five years in a high-volume kitchen, with experience in scratch cooking.

Qualifications

• Minimum five years experience in high-volume operations.
• Experience with scratch cooking.
• Ability to lead kitchen in absence of executive chef.
• Strong knowledge of health and sanitation codes.

Responsibilities

• Maintains a safe environment for patients, staff and self.
• Ensures recipes are followed and production records kept.
• Monitors ticket times and patient meal prep.
• Trains kitchen staff on food prep, safety, sanitation and equipment use.
• Conducts monthly culinary training incl. Black Hat program.
• Maintains recipe database and coordinates patient nutrition with RD.
• Establishes cleaning/maintenance schedules for equipment and areas.
• Performs self-audits to ensure standards.
• Assigns daily cleaning tasks to staff.
