Job summary

Chartwells Higher Education Dining Services at CSU Monterey Bay is seeking a Chef/Sous who will lead kitchen operations, coordinate cooks and food-service staff, and ensure quality and safety in a busy campus dining environment.

Qualifications

• Experience in scheduling, ordering, inventory, and staff management within a food-service environment.
• Familiarity with culinary trends, batch cooking, recipe adherence, and allergen trainings.

Responsibilities

• Cooks and prepares food following approved recipes and production standards.
• Supervises hourly food service associates, including scheduling, payroll, training, and performance reviews.
• Stores and handles food safely per regulations; maintains sanitation of equipment and work areas.
• Ensures proper presentation, portion control, and serving temperatures; monitors inventory and deliveries.
• Interacts with customers to resolve complaints and communicates feedback to supervisors.
