Eleven Madison Park is a plant-based fine dining restaurant overlooking Madison Square Park in New York City. Opened in 1998 as a French brasserie, it has been led by Chef Daniel Humm since 2006 and owned by Make it Nice Hospitality since 2011. The restaurant has received numerous accolades, including 4 stars from the New York Times and 3 stars from the Michelin guide.

In 2021, it reopened as a fully plant-based restaurant, continuing its commitment to reinventing fine dining through precision, elegance, and passion.

Reports to: Chef de Cuisine and Executive Sous Chef.

Duties and Responsibilities
Culinary
  • Supervise line cooks, commis, and externs in daily mise en place and prep.
  • Maintain cleanliness and organization of storage spaces per HACCP standards.
  • Taste and ensure quality and proper seasoning of mise en place.
  • Lead assigned station to ensure proper preparation and plating.
  • Coordinate with dining room and expeditor for course timing.
  • Work with Chef de Cuisine and maintenance team to uphold standards.
  • Maintain HACCP documentation diligently.
Hiring
  • Assist in interviewing potential team members.
  • Recruit new kitchen staff to support restaurant growth.
  • Supervise and mentor line cooks, commis, and externs.
Menu Development
  • Support new dish development with Chef de Cuisine.
  • Assist in recipe creation and costing.
  • Innovate techniques for dishes as needed.
Qualifications
  • Minimum 3 years of Michelin-star restaurant experience.
  • At least 3 years of management experience.
  • Advanced knife skills and recipe adherence.
  • Excellent communication skills.
  • Proficiency with Microsoft Office and Outlook.
  • Mentoring capabilities.
  • Ability to work independently and multitask.
  • Experience with diverse cooking styles.
  • Adaptability and quick decision-making in a fast-paced environment.
  • Physical ability to lift up to 50 lbs. and stand for long periods.
