Join us as a Sous Chef at Major Food Group

Major Food Group is hiring a talented Sous Chef to join our team at Carbone Miami! Our ideal candidates will help carry our culture, standards of service, and quality of food to the new location. While comparable experience is preferable, we welcome individuals with passion and love for people, food, and wine. Experience in Michelin-starred restaurants is preferred.

Founded by Mario Carbone, Rich Torrisi, and Jeff Zalaznick, Carbone is one of the most celebrated Italian restaurants of the last decade. The New York Times describes it as: “It is a fancy red-sauce joint as directed by Quentin Tarantino, bringing back the punch-in-the-guts thrills of a genre that everybody else sees as uncultured and a little embarrassing, while exposing the sophistication that was always lurking there.” The restaurant boasts technical prowess and a sense of entertainment that sets it apart.

Responsibilities
  • Sourcing, ordering, and receiving the highest quality ingredients
  • Developing, teaching, and maintaining all recipes and techniques
  • Executing menu items from start to finish
  • Organizing a large team and holding each chef accountable for their responsibilities
  • Overseeing and maintaining smooth professional service
  • Maintaining all kitchen equipment and following up on repairs
  • Ensuring high standards of cleanliness and organization
  • Managing scheduling and inventory within budget
Requirements
  • 3 to 5 years of progressive experience in back-of-house operations
  • Experience in Michelin-rated restaurants is preferred
  • Strong knowledge of administrative duties in the kitchen
  • Proven ability to teach and mentor kitchen staff
  • Excellent communication and supervisory skills
  • Self-motivated with quick thinking

Compensation ranges from $75,000 to $85,000 annually, based on experience.
