Job Description
  • Monitors food production, quality, consistency, inventory and scheduling staffing levels.
  • Assists the Executive Sous Chef in the preparation of all food items and management of kitchen personnel.
  • Assumes the responsibilities of the Executive Sous Chef in his/her absence.
  • Minimizes food/labor costs.
  • Ensures the cleanliness and safety of the kitchen.
  • Ensures proper portion control, proper handling and storage of all food items in accordance with The Big Easy Casino’s policies.
  • Assists in directing line associates preparation of food as per recipes and plating guides as well as cooking on the line when needed.
  • Produces a consistent product to meet and exceed guests' needs in a timely manner.
  • Ensures top quality sanitation standards.
  • Performs other tasks and duties as assigned.
Qualifications

  • High School Diploma.
  • College degree or certification in culinary field/hospitality field preferred.
  • Minimum 5 years cooking experience.
  • Minimum 2+ years Sous Chef experience.
  • Must be able to obtain the appropriate state occupational license.
  • Ability to motivate and lead others by example.
  • Must adhere to the hygiene and dress code standards for the department.
  • Strong time management and culinary skills.
  • Must be able to lift up to 50lbs.
  • Required to work a flexible schedule which includes nights, weekends and holidays.
