Job Description
- Monitors food production, quality, consistency, inventory and scheduling staffing levels.
- Assists the Executive Sous Chef in the preparation of all food items and management of kitchen personnel.
- Assumes the responsibilities of the Executive Sous Chef in his/her absence.
- Minimizes food/labor costs.
- Ensures the cleanliness and safety of the kitchen.
- Ensures proper portion control, proper handling and storage of all food items in accordance with The Big Easy Casino’s policies.
- Assists in directing line associates preparation of food as per recipes and plating guides as well as cooking on the line when needed.
- Produces a consistent product to meet and exceed guests' needs in a timely manner.
- Ensures top quality sanitation standards.
- Performs other tasks and duties as assigned.
Qualifications
- High School Diploma.
- College degree or certification in culinary field/hospitality field preferred.
- Minimum 5 years cooking experience.
- Minimum 2+ years Sous Chef experience.
- Must be able to obtain the appropriate state occupational license.
- Ability to motivate and lead others by example.
- Must adhere to the hygiene and dress code standards for the department.
- Strong time management and culinary skills.
- Must be able to lift up to 50lbs.
- Required to work a flexible schedule which includes nights, weekends and holidays.
