Title: Sous Chef - Parson's Lincoln Park

Reports to: Executive Chef, Culinary Operations Director, Culinary Director

Position Objective: The Sous Chef is responsible for assisting in the development, cost management, production, and execution of all site menus as well as the hiring, scheduling, and professional development of all staff within their assigned department.

Essential Duties and Responsibilities:

  1. Coordinating with the Executive Chef, Assistant Culinary Operations Director, & Culinary Operations Director
  2. Controlling Consistency & Quality
  3. Coordinating with front of house staff to ensure guest expectations are exceeded
  4. Implementing new recipes/procedures as needed
  5. Enforcing all labor laws (federal, state and local)
  6. Executing the role of expeditor effectively and efficiently, being able to train others with the same standards.
  7. Managing Costs of Goods Sold
  8. Training and developing kitchen staff
  9. Overseeing Inventory Kitchen Goods
  10. Maintaining a clean, organized, and safe kitchen
  11. Managing Kitchen Staff
  12. Monitoring and maintaining line plating and quality
  13. Utilizing labor effectively to meet budgets
  14. Working with Management on Staff Knowledge and Training

*This role requires the following certifications:

  • Food Manager
  • Allergen Training

May perform other duties as they arise

Must be able to lift 40 lbs and stand for extended periods of time

Land and Sea Dept. supports a healthy work-life balance. For full transparency, we do however expect all of our salaried leaders to fulfill the expectation of a minimum of 50 hours a week, within a minimum of 5 work days on average. We acknowledge that some weeks might require less attention by our leaders and support them to balance their lives as needed. In turn, we acknowledge that some weeks might require significant attention by our leaders and we expect them to support their properties by acknowledging the same.

Compensation: Annual salary based on skill set and experience. 90-day Performance Review. Annual Performance/Salary Review. Access to BCBS Subsidized Health Insurance (after 30 days).

Paid Time Off: 11 days yearly Paid Time Off.

  • 6 Days vacation accrued at ½ day per month
  • 5 Days Earned Sick Leave
