  • Develop thorough knowledge of DÙNDÚ’s recipes, ingredients, allergens, preparation methods, yields, portioning and quality standards.
  • Monitor food produced during the shift and correct issues with quality, consistency or presentation.
  • Ensure food production, storage, labeling, cooling and handling meet or exceed NYC Department of Health requirements.
  • Maintain an immaculate, organized kitchen, including workstations, storage areas, equipment and tools, and remain in full uniform throughout every shift.
  • Check and properly store deliveries, monitor product levels, communicate shortages and help reduce waste.
  • Ensure required prep and production are completed, and all opening, shift‑change and closing checklists are accurately completed, so the next shift is set up for success.
