University at Buffalo Campus Dining & Shops is seeking a Lead Cook to manage high-volume meal production with emphasis on quality and customer service. In this probationary full-time, union-eligible role, you will follow standardized recipes, supervise shifts, train staff, and uphold HACCP standards in a busy campus kitchen.

The position requires teamwork, strong organizational skills, and the ability to work overtime as required by the union contract.

Formación

• Minimum 3 years professional cooking experience in a high-volume kitchen.
• Ability to slice/portion meats and cheese; sanitize slicer daily.
• Excellent customer service skills.
• Proficient in professional knife handling.
• Experience following standardized recipes.
• Experience organizing and maintaining kitchen workstations.
• Knowledge of safe food handling and sanitation.
• Good math skills and accurate measurement.
• Able to work independently and as part of a team.
• English reading/writing proficiency; reliable transportation.

Responsabilidades

• High-volume food preparation and cooking following established recipes and production system.
• Maintain production and usage records as required.
• Utilize products to minimize food costs.
• Some supervisory duties during shifts including coaching staff on knife skills and proper usage of kitchen equipment.
• Maintain high sanitary, hygienic, and safety standards adhering to HACCP & NYS Dept. of Health guidelines.
• Communicate with management on kitchen topics including par levels, recipe corrections, staff knowledge.
• Assist with training new hires and student workers as needed.
• General cleaning and other food service duties as requested by management.
