Job summary

• Knowledge of JCAHO, HFS, IDPH, OSHA, OBRA, county, city, and state regulations as well as standards of accrediting agencies as they pertain to dietary services.

Responsibilities

• Support the facility's philosophy of care and strive to achieve its goals and objectives.
• Establish, with the dietary consultant, dietary policies and procedures and keep them current with state and federal regulations.
• Represent dietary department with administration and other departments at staff meetings and communicate pertinent information to dietary employees.
• Supervise ordering of all food and kitchen supplies and maintain appropriate reserves; file invoices and maintain records.
• Supervise the receiving and storage of food and kitchen supplies and keep storage area neat and orderly.
• Ensure use of standardized recipes in food preparation.
• Inspect and supervise food preparation to ensure sanitation standards are met.
• Control food and labor costs without compromising quality.
• Maintain food service equipment in collaboration with the maintenance director.
• Recruit staff, interview, and verify references to employ appropriate personnel.
• Supervise scheduling to ensure uninterrupted resident service.
• Provide documentation of disciplinary actions in personnel records when needed.
• Provide regular in-services to dietary staff.
• Check time records for payroll processing.
• Visit residents at admission for nutritional assessment and preferences.
• Maintain cycle menu weekly and keep essential records.
• Meet with dietary consultant regularly and act on recommendations.
• Make rounds at meal times to check resident acceptance and adjust as needed.
• Ensure special diets are provided as prescribed (mechanical, diabetic, etc.).
• Update nourishment lists and ensure hydration.
• Monitor resident weight changes and adjust diets with the dietitian.
• Provide meal substitutions with physician approval.
• Coordinate dietary services for facility events.
• Develop initial care plan for residents and update quarterly using EMR.
• Complete Nutrition section of the MDS form as required.
• Participate in Care Plan, QA, and Performance Improvement meetings.
• Implement plans of correction from state and federal surveys.
• Follow fire, safety, infection control, and evacuation policies.
• Perform other duties as directed by the Administrator.
• Work as weekend Supervisor as part of Department head rotation.
