Job summary

Bloomingdale's is seeking a Senior Manager, Culinary to lead culinary strategy across our national restaurant portfolio. You will shape menus, manage procurement, and drive cost efficiency while upholding brand standards.

Reporting to the Food & Beverage leadership, you will mentor BOH teams, ensure food safety compliance, and push performance through P&L awareness and vendor partnerships across multiple units.

Qualifications

• Bachelor's Degree from a 4-year college or university.
• 5+ years direct experience.
• Executive or corporate chef experience.
• Knowledge of food safety standards; ServSafe Manager Certificate or equivalent.
• Multi-unit management experience in a full-service restaurant.
• Knowledge of P&L, food cost and payroll budgets.
• Ability to read, write, and interpret reports, procedures, and recipes.

Responsibilities

• Culinary program strategy modernizes and elevates Bloomingdale's Food & Beverage division.
• Roll out standardized menus for each business model with procurement, recipes, nutrition, and plating guides.
• Oversee BOH operations including procurement, storage, inventory, preparation, and waste management; standardize processes with checks and logs.
• Maintain highest standards of food quality, consistency, presentation, and taste that meet customer expectations and brand.
• Mentor BOH staff and collaborate with FOH to ensure cohesive brand expression across divisions.
• Ensure adherence to all food safety regulations and health codes.
• Establish and maintain vendor relationships to elevate offerings and control costs.
• Directly own and manage BOH expenses (supply, food, liquor) to ensure unit profitability.
