Job summary

Qualifications

• Knowledge of large-quantity food storage, preparation, and serving.
• Ability to plan menus and supervise staff.
• Experience with HACCP and kitchen sanitation.
• Strong record-keeping and inventory management skills.

Responsibilities

• Supervise incarcerated workers in food preparation and service.
• Receive, store, rotate, and re-thermalize food following HACCP standards.
• Maintain food safety and proper use of equipment.
• Coordinate activities with other correctional cooks and ensure uniform compliance.
