Responsibilities

• Cooperate with the Assistant Correctional Food Manager in ordering food items and supplies for the California Institution for Men.
• Complete the Food Service Department’s accounting and record keeping functions.
• Assimilate data into the computer, monitor deliveries of supplies, ensure adherence to schedules.
• Train and supervise Correctional Supervising Cooks in the preparation of food items.
• Provide training in serving portions and acceptable food handling practices.
• Conduct sanitary and safety inspections of kitchens and dining rooms with written documentation weekly.
• Supervise and train subordinate staff and outline clear work performance expectations.
• Evaluate work performance and prepare written reports for subordinate staff.
• Train staff in job-related functions, incarcerated persons/staff interaction, time cards, record keeping, safety procedures, HACCP and SDS.
