Job summary

Gonnella Baking Co. is seeking a Senior Food Scientist to lead bakery product development from concept to commercialization.

You will oversee formulation, validation, and scale-up, collaborating with Quality, Operations, Sales, and Compliance to meet timelines and product specs. The role requires strong project management, expertise in bakery ingredients, and a track record of delivering market-ready products.

Qualifications

• Bachelor's degree in Food Science or related field required.
• Minimum 5 years of product development experience in the food industry.
• 2+ years in baking industry with hands-on development and commercialization.
• Strong knowledge of bakery ingredients, dough systems, and baking processes.
• Proven ability to lead cross-functional teams and manage multiple projects.

Responsibilities

• Lead bakery product development from bench-top to full-scale manufacturing.
• Design experiments, pilot plant trials, shelf-life studies, and validation testing.
• Collaborate with Food Safety & Quality, Operations, Sales, and Marketing.
• Review nutrition info, specs, and technical documentation.
• Mentor junior scientists and support customer presentations.
• Travel domestically and internationally as required.
