Job summary

Combined Selection Group Ltd. is seeking an experienced Food Scientist to lead development of frozen and pre-proofed dough products in a commercial bakery setting.

You will manage the full product lifecycle from concept through scale-up, trials, and commercialization, with a focus on shelf-life and stability. The role requires hands-on lab work and close collaboration with Operations, Quality, Supply Chain and Sales to meet technical and commercial goals.

Qualifications

• Bachelor's degree in Food Science, Bakery Science, Cereal Science or related discipline is required.
• Approximately 5-10 years of relevant commercial experience in frozen dough manufacturing or bakery product development.
• Experience taking frozen or pre-proofed dough products from development through to commercial production.
• Strong practical formulation experience across straight and laminated dough systems.
• Solid knowledge of bakery raw materials and their functional contribution.
• Experience with shelf-life and stability studies for frozen products.
• Excellent documentation and organizational skills with ability to manage multiple projects.

Responsibilities

• Take ownership of new frozen and pre-proofed dough development projects from concept to commercial launch.
• Develop and refine formulations across straight and laminated dough platforms (croissants, Danish, puff pastry, enriched and sweet doughs).
• Establish shelf-life protocols and evaluation criteria for storage and distribution.
• Own scale-up and commercialization through pilot and full-scale manufacturing.
• Collaborate with Operations, Quality, Engineering, Supply Chain and Sales to ensure viability.
• Maintain complete and accurate records and laboratory documentation.
