Qualifications

• Minimum of 2 years of experience as a sushi cook required.
• Knowledge and operation of all kitchen equipment, small and large scale.
• Experience working in a fast-paced kitchen and demonstrated customer service experience.
• Flexibility to work evenings, weekends, holidays, and extended hours as business needs require.
• ServSafe certification (preferred).
• Experience in a private club, resort, or luxury restaurant setting (preferred).

Responsibilities

• Prepare sushi orders according to recipes and instructions.
• Prepare a variety of seafood, meats, vegetables, and other ingredients for service.
• Properly handle ready-to-eat food served raw following all safety standards.
• Use knives and equipment to portion, cut, slice, and present food.
• Monitor temperatures of food and equipment.
• Assist with inventory and stock of kitchen supplies.
• Maintain cleanliness of kitchen and sushi station.
• Adhere to Moonlight Basin brand standards and safety protocols.
