Job summary

The Chef position at Kenai Princess Wilderness Lodge, part of HAP Alaska Yukon, is a seasonal full-time role within the Food and Beverage department. You will work with management to ensure a great product is delivered, supervise production and storage, and uphold health, safety, and sanitation standards.

Candidates should have culinary training or equivalent experience and be proficient with POS, Excel, and Word. Eligibility to work in the United States and a background check are required.

Qualifications

• Culinary school level knowledge or equivalent experience.
• Proficiency with POS, Excel, and Word.
• Background check required.
• Must be 18+ to reside in company housing where available.
• Must be eligible to work in the United States; Holland America-Princess cannot sponsor visas.

Responsibilities

• Work closely with the Food and Beverage management team to ensure a great product is delivered every time.
• Assist in supervising the food production and storage.
• Assist in overseeing the record keeping, control logs, and auditing.
• Ensure company Health, Environmental, Safety, and Sanitation procedures are followed and held to high standards including internal audits.
• Follow all company recipes and ensure staff are prepping, preparing and plating to standard.
• Assist in FIFO and food cost management of restaurant.
• Assist in menu development and creation as requested.
• Participate in pre-shift and safety meetings with direct reports and staff.
• Mentor and coach staff to ensure the highest level of product being served.
