Princess Cruises and Holland America Line seeks a Chef for Copper River Princess Lodge on a seasonal full-time basis. Lead food production, supervise staff, and ensure HACCP and health standards while delivering exceptional dining experiences in lodge operations.

The role requires culinary training or equivalent experience, strong POS and MS Office skills, Serve-safe Manager certification, Alaska Food Handler Card, and an alcohol service permit. Must lift 50 lbs and work a demanding schedule.

Qualifications

• Culinary training or equivalent work experience.
• Proficiency with POS systems, Excel and Word.
• Must pass a pre-employment background check.
• Must be eligible to work in the United States.

Responsabilités

• Collaborate with Food and Beverage leadership to deliver high-quality product.
• Supervise food production and storage activities.
• Oversee record keeping, control logs, and audits.
• Ensure H.E.S.S. procedures and internal audits meet high standards.
• Follow recipes and ensure prep and plating meet standards.
• Assist in food cost management and FIFO practices.
• Contribute to menu development when requested.
• Attend pre-shift and safety meetings with staff.
• Mentor and coach staff to maintain product quality.
