Job summary

Halperns’ Steak & Seafood is seeking a Seafood Cutter for the PM shift at our Fort Lauderdale facility. The role requires precise trimming, deboning, and quality checks to meet customer specs while maintaining safety standards.

Starting at $20.00/hour, with Sunday 1:00 PM - 9:30 PM and Monday–Thursday 3:00 PM - 11:30 PM. We offer medical, dental, 401(k) style saving plans, profit sharing, and opportunities for career advancement.

Qualifications

• High school diploma or equivalent required; post high school or specialized training preferred.
• Experience trimming and deboning seafood to meet yield targets and customer specs.
• Knowledge of HACCP and quality control procedures is advantageous.

Responsibilities

• Schedules production with supervisors and managers.
• Cleans, trims, and debones products for processing.
• Inspects and removes defects or blemishes.
• Separates meats and by-products and seals containers.
• Uses knives and trimming equipment to size portions.
• Weighs products and labels containers.
• Maintains quality and cost targets and meets customer specs.
• Follows QA, HACCP, SQF, and safety regulations.

Position Summary:

Fish cutters use an array of sharp knives and tools that they must keep sharp and clean, and they must be strict about cleanliness as mandated by the company. Cutters are responsible for trimming the raw material to the desired specifications/yield targets.

Essential Functions:

• Works with supervisors and production managers to schedule production.
• Cleans, trims, and debones products for future processing.
• Inspects and removes defects, bruises, or blemishes from the product.
• Separates meats and by-products into specified containers and seals containers as needed.
• Uses knives, cleavers, or other equipment to perform trimming.
• Weighs product and tag containers for weight and contents.
• Reduces processing costs but accurately cuts and sizes portions with good yields and meets customer specs.
• Accurately reads and comprehends all customer-specific instructions.
• Perform quality control checks and communicate with supervisors and managers regarding any defects.
• A fish cutter must follow and maintain all Quality Assurance, HACCP, SQF requirements, and Occupational Health and safety regulations and ensure all employees under their department follow all the regulations.
• Maintaining cleanliness and hygiene of the work area and the cutting knives and equipment.
• Perform any other duties as required.

Knowledge / Skills / Abilities:

• Must have a working knowledge of production equipment.
• Demonstrated ability to portion all seafood products accurately and timely.
• Ability to reduce processing costs by cutting and sizing portions accurately with good yields and meeting customer specs.
• Ability to problem solve in terms of trimming and product substitutions.
• Ability to work in a fast-paced, high-pressure, challenging environment
• Must be a team player and possess a positive attitude.
• Ability to effectively communicate, both written and verbally, in English.
• Follows company’s Quality Control procedures.
