Job summary

Halperns' Steak & Seafood in Ft. Lauderdale, FL seeks a skilled meat production associate to portion boneless cuts and support daily processing operations.

You will work with supervisors to schedule production, trim and portion meat, inspect for defects, and ensure customer specs are met. Strong teamwork and adherence to QC procedures are essential, with a 1:00pm start to finish schedule on Sundays through Fridays.

Qualifications

• Must have working knowledge of production equipment.
• Demonstrated ability to portion all boneless cuts of meat.
• Ability to reduce processing costs by cutting and sizing portions accurately with good yields.
• Ability to problem solve in trimming and substitutions.
• Ability to work in a fast paced, high pressure environment.
• Must be a team player and communicate effectively in English.
• Understand Meat Buyer’s Guide specs and apply to internal product specs.
• Follows company Quality Control procedures.

Responsibilities

• Schedule production with supervisors and production managers.
• Trim, portion, and package subprimals of beef, pork, lamb and veal.
• Inspect meat products for defects and read customer instructions.
• Perform Quality Control checks and report defects.
• Weigh and label containers; follow product specifications.
• Operate and maintain cutting tools and equipment.

Pay: $16/Hr.

Schedule: Sunday -Friday, 1:00pm - Finish

Position Summary

Responsible for portion and merchandising all boneless meat products.

Essential Functions

• Works with supervisors and production managers to schedule production.
• Cleans, trims, slices, and portions subprimals of beef, pork, lamb and veal for future processing.
• Inspects meat products for defects, bruises or blemishes.
• Accurately reads and comprehends all customer specific special instructions.
• Perform Quality Control checks and communicates with supervisors and manager any defects.
• Separates meats and byproducts into specified containers and seal containers.
• Uses knives, cleavers or other equipment to perform meat cutting and trimming.
• Weighs meats and tag containers for weight and contents.
• Follows company’s detailed product specifications.
• Performs other duties as assigned.

Knowledge, Skills & Abilities

• Must have working knowledge of production equipment.
• Demonstrated ability to portion all boneless cuts of meat in an accurate and timely manner.
• Ability to reduce processing costs but cutting and sizing portions accurately with good yields as well as meeting customer specs.
• Ability to problem solve in terms of trimming and product substitutions.
• Ability to work in a fast paced, high pressure, challenging environment.
• Must be a team player and possess a positive attitude.
• Ability to effectively communicate, both written and verbally, in English.
• Must demonstrate the ability to understand the Meat Buyer’s Guide specifications as they relate to the company’s internal product specifications.
• Follows company’s Quality Control procedures.
