Job summary

Halperns' Steak & Seafood is seeking a Seafood Cutter for PM shifts in Fort Lauderdale to trim and portion seafood efficiently while upholding strict quality standards.

You will work with a team to prepare raw materials, inspect for defects, and ensure accurate weights and packaging according to customer specs. A strong emphasis on safety, cleanliness, and timely production is required.

Qualifications

• High School or equivalent required; specialized training preferred.
• Ability to operate production equipment safely and efficiently.
• Proven ability to portion seafood accurately and minimize waste.
• Strong attention to cleanliness and food safety standards (HACCP/SQF).
• Good communication skills in English, able to follow instructions.

Responsibilities

• Schedule production with supervisors and managers to meet targets.
• Clean, trim, and debone products for processing.
• Inspect for defects, bruises, or blemishes and separate by-products.
• Weigh products and tag containers; ensure correct weights.
• Follow QA procedures and maintain clean work area; comply with safety rules.

Cutters are responsible for trimming the raw material to the desired specifications/yield targets.Essential Functions:Works with supervisors and production managers to schedule production.Cleans, trims, and debones products for future processing.Inspects and removes defects, bruises, or blemishes from the product.Separates meats and by-products into specified containers and seals containers as needed.Uses knives, cleavers, or other equipment to perform trimming.Weighs product and tag containers for weight and contents.Reduces processing costs but accurately cuts and sizes portions with good yields and meets customer specs.Accurately reads and comprehends all customer-specific instructions.Perform quality control checks and communicate with supervisors and managers regarding any defects.A fish cutter must follow and maintain all Quality Assurance, HACCP, SQF requirements, and Occupational Health and safety regulations and ensure all employees under their department follow all the regulations.Maintaining cleanliness and hygiene of the work area and the cutting knives and equipment.Perform any other duties as required.Knowledge / Skills / Abilities:Must have a working knowledge of production equipment.Demonstrated ability to portion all seafood products accurately and timely.Ability to reduce processing costs by cutting and sizing portions accurately with good yields and meeting customer specs.Ability to problem solve in terms of trimming and product substitutions.Ability to work in a fast-paced, high-pressure, challenging environmentMust be a team player and possess a positive attitude.Ability to effectively communicate, both written and verbally, in English.Follows company’s Quality Control procedures.Equipment / Tools / Technology:KnifeCut GlovePortion ScalePin-bone pliersHand ScalersFish hookSharpening MachineEducational & Experience Requirements:High School / EquivalentPost High School / Specialized Training (preferred)Bachelor Degree (preferred)Other Requirements of the Position:Ability to work a flexible schedule according to seasonal demandsYou are required to provide your most recent employment experience for your application to be considered complete.BE PART OF AN AMAZING CULTURE WHERE WHAT MATTERS TO YOU, MATTERS TO US!Halperns' Steak & Seafood values our customers and understands that their success is largely dependent upon their workforce.
