Job summary

Halperns Steak & Seafood is hiring a Seafood Cutter in Orlando, FL. Starting pay ranges from $19 to $23 per hour, with a Mon–Fri schedule. The role focuses on portioning and merchandising seafood, ensuring quality and meeting customer specs.

Responsibilities include production scheduling support, trimming, inspecting for defects, weighing and packaging, and adhering to HACCP and safety regulations. Benefits include medical, dental, EFAP, and pre-tax savings plans after 30 days.

Qualifications

• High School or equivalent required; post-high school training preferred.
• Minimum of one year of experience as a professional fish/seafood cutter.
• Experience in high-end fish/seafood processing preferred.

Responsibilities

• Schedule production with supervisors and production managers.
• Cleans, trims, and debones seafood products.
• Inspect and remove defects, bruises, or blemishes.
• Weigh, label, and containerize portions.
• Cut portions accurately to meet customer specs and control costs.
• Follow customer instructions and QA procedures.
• Perform quality control checks and report defects.
• Maintain sanitation and equipment cleanliness; follow HACCP and safety rules.

Position Summary

Responsible for portion and merchandising all seafood.

Essential Functions

• Works with supervisors and production managers to schedule production.
• Cleans, trims, and debones products for future processing.
• Inspects and removes defects, bruises, or blemishes from the product.
• Separates meats and by-products into specified containers and seals containers as needed.
• Uses knives, cleavers, or other equipment to perform trimming.
• Weighs product and tag containers for weight and contents.
• Reduces processing costs but accurately cuts and sizes portions with good yields and meets customer specs.
• Accurately reads and comprehends all customer-specific instructions.
• Perform quality control checks and communicate with supervisors and managers regarding any defects.
• A fish cutter must follow and maintain all Quality Assurance, HACCP, SQF requirements, and Occupational Health and safety regulations and ensure all employees under their department follow all the regulations.
• Maintaining cleanliness and hygiene of the work area and the cutting knives and equipment.
• Perform any other duties as required.

Knowledge / Skills / Abilities

• Must have working knowledge of production equipment.
• Demonstrated ability to portion all seafood product in an accurate and timely manner.
• Ability to reduce processing costs by cutting and sizing portions accurately with good yields as well as meeting customer specs.
• Ability to problem solve in terms of trimming and product substitutions.
• Ability to work in a fast paced, high pressure, challenging environment.
• Must be a team player and possess a positive attitude.
• Ability to effectively communicate, both written and verbally, in English.
• Follows company’s Quality Control procedures.

Educational & Experience Requirements

High School or equivalent required. Post High School or specialized training preferred. A minimum of one year of experience as a professional cutter is required. High-end fish/seafood processing experience is strongly preferred.
