Job summary

The Oklahoma Military Department is seeking an Assistant Food Service Manager II to support daily operations of the Sooner Job Challenge dining facility. This role serves up to 100 people per meal, with three meals daily and after-dinner snacks, participating in USDA National School Meals programs.

You will assist in purchasing, planning, preparation, serving, inventory control and sanitation, while supervising staff and ensuring proper records and reports are maintained.

Qualifications

• Associate’s degree in culinary arts, food management or a similar field and one year of supervisory experience; or an equivalent combination of education and experience. Youth experience is desirable.

Responsibilities

• Assist the Food Service Manager in coordinating purchasing, menu planning, food preparation and serving; manage inventory and sanitation in dining facilities.
• Supervise staff and prepare work schedules.
• Create and maintain food production records according to state guidelines and required reports.
• Review menus, interpret recipes and portions per USDA school meals programs.
• Recommend updates to standard operating procedures as necessary.
• Present findings to supervisor on relevant issues.
• Attend staff meetings and provide annual training for all school nutrition employees.
• Perform related work as assigned; may supervise students serving in support roles.
