Job summary

Pollo Tropical is seeking a Manager in Training (MIT) to develop into a leadership role within restaurant operations. You will support daily management, food safety, guest service, labor, and team development while working closely with senior leaders to foster a high-performance culture and operational excellence.

Qualifications

• High school diploma or GED required.
• 3–5 years in restaurant with at least 2 years in a supervisory role.
• ServSafe Certification required.
• Proficiency with HRIS platforms, Outlook, and internal tools.
• Strong verbal and written communication in English.

Responsibilities

• Oversee day-to-day restaurant operations ensuring food quality, safety, cleanliness, and consistent service and presentation.
• Coach and engage a high-performing team culture; provide accountability.
• Lead 25+ employees and ensure adherence to standards and policies.
• Perform daily pre-shift huddles to align goals and updates.
• Assist in scheduling, inventory, payroll, and financial reconciliation.
• Participate in hiring, onboarding, and developing team members and future leaders.
• Monitor labor and financial performance to meet key targets.
