Job summary

Pollo Tropical is seeking a Manager in Training (MIT) in Florida to gain comprehensive, hands‑on experience in restaurant operations and leadership development. You will support daily management across food safety, guest service, labor, and team progression, reporting to the Training General Manager.

You will coach a team of 25+, participate in hiring and training, and help achieve sales, labor, and EBITDA targets while maintaining safety and a welcoming environment.

Qualifications

• High school diploma or GED required.
• 3–5 years in restaurant with supervisory experience.
• ServSafe Certification required.
• Proficiency with HRIS, Outlook, and internal tools.

Responsibilities

• Oversee daily operations ensuring food quality, safety, and service.
• Coach and develop a high‑performing team of 25+ employees.
• Monitor labor and financial performance toward targets.
• Lead daily pre‑shift huddles and onboarding activities.
• Support hiring, training, and guest experience initiatives.
