Grand View Lodge in Nisswa, MN, is seeking an experienced Banquet Chef to plan, coordinate, and execute culinary operations for banquet and catering events. Qualifications

• 2+ years of culinary experience with banquet/high-volume service.
• Ability to lead a kitchen team with composure under pressure.
• Strong food safety knowledge and sanitation standards.
• Understand large-quantity production, ordering, and waste.
• Read chemical labels and produce clear reports as needed.
• Meets culinary skill standards and possesses requisite education.

Responsibilities

• Plan and develop event menus with catering/events team.
• Execute large-quantity food preparation with quality and presentation.
• Order ingredients and supplies for each event while minimizing waste.
• Recruit, train, and supervise banquet kitchen staff.
• Ensure food safety and sanitation meet guidelines and regs.
• Be ready for service on schedule and meet event deadlines.
• Close and clean work areas after each event.
• Communicate with Executive Sous Chef on equipment and inventory.
• Collaborate with event coordinators and clients for seamless execution.
• Maintain hygiene standards per Minnesota regulations and Lodge protocols.
• Weekend/holiday availability and extended hours during peak seasons.
