The Judge Group, INC. is seeking a Quality Control Technician for a growing commercial bakery in the Mokena, IL area to support daily production operations and ensure products meet safety and quality standards.

You will conduct inspections, testing, and maintain thorough documentation throughout the bakery process, including HACCP and GMP compliance, with a schedule of 12-hour shifts and overtime opportunities.

Qualifications

• High school diploma or equivalent required; Associate's degree in Food Science is a plus.
• 1+ years of QC/QA experience in a food manufacturing environment; bakery experience a plus.
• Knowledge of HACCP, GMP and food safety regulations.
• Ability to work in a fast-paced, temperature-varied production environment.
• Strong attention to detail and accurate record-keeping.
• Basic math and computer skills (data entry, spreadsheets).
• Ability to stand, walk, and lift up to 50 lbs for full shift duration; willing to work one weekend day per week.

Responsibilities

• Perform routine quality checks on raw materials, in-process product, and finished goods
• Conduct sensory evaluations (taste, texture, appearance) and physical testing (weight, temperature, pH, moisture)
• Monitor and document CCPs (Critical Control Points) per HACCP plan
• Verify GMP (Good Manufacturing Practices) and sanitation compliance on the production floor
• Complete and maintain accurate QC records, batch logs, and traceability documentation
• Flag and elevate non-conforming product; support root cause investigations
• Calibrate and maintain QC testing equipment
• Support internal and third-party audits (SQF, BRC, or similar)
• Communicate quality issues clearly to production supervisors and management

Schedule: 12-hour shifts, Monday–Friday (3:00 AM–3:00 PM or 3:00 PM–3:00 AM), one weekend day required. Ample overtime available.

About the Role

A growing commercial bakery in the Mokena, IL area is seeking a detail-oriented Quality Control Technician to support daily production operations. This role is critical to ensuring every product leaving the facility meets food safety, quality, and regulatory standards. You'll work hands-on with production teams, conducting inspections, testing, and documentation throughout the bakery process.
