Responsibilities

• Sort carcasses and parts and identify defects.
• Dispose of unwholesome carcasses, parts, and viscera.
• Perform preparation and presentation activities.
• Mark abnormalities or lesions on carcasses.
• Follow food safety procedures and SOPs.
• Notify supervisors of diseases or concerns.
• Maintain required documentation.
• Attend hire and refresher trainings; train others.
