Qualified candidates have 1+ years in meat processing, strong primal/subprimal skills, and the ability to work in a cold environment, lifting 50+ lbs.

Qualifications

• 1+ years meat cutting or processing experience in a plant/wholesale setting.
• Strong primal and subprimal breakdown skills preferred.
• Boning experience on rounds and chucks is a plus; training available for right candidate.

Responsibilities

• Break beef carcasses into primal and subprimal cuts for wholesale and custom processing.
• Process custom orders to retail and portion-cut specs.
• Perform boning on rounds and chucks as needed; maintain knives and cleanliness.
• Handle grinding, packaging, labeling, and proper product storage.
• Keep knives sharp, clean, and sterilized; operate processing equipment safely.
• Follow HACCP and FSIS protocols maintained throughout shift.
• Assist with end-of-shift cleanup and sanitization of fabrication area.
• Support cooler organization and load-out for wholesale/custom orders.
