Job summary

Trapper's Sushi Co. in Covington, WA is seeking a Prep Cook who is organized, dependable, and detail-oriented. You’ll set up the kitchen for service and work behind the scenes with line cooks, sushi chefs, and leadership to ensure every station has what it needs.

We offer competitive pay at $18.25 per hour, plus benefits and growth opportunities within a multi-state restaurant group. Must live in the Covington area and be able to work early shifts.

Qualifications

• Previous kitchen or food prep experience preferred; we're willing to train the right candidate.
• Basic knife skills and the ability to follow recipes and prep lists accurately.
• Understanding of food safety, sanitation, and FIFO procedures, or willingness to learn.
• Strong time-management skills and attention to detail.
• Reliable attendance and a positive, team-oriented mindset.
• Washington State Food Worker Card required, or must be obtained within 14 days of beginning work.

Responsibilities

• Prepare ingredients per daily prep lists, recipes, and portion standards; wash, cut, portion produce and proteins; make sauces.
• Use knives and kitchen equipment safely and correctly.
• Label, date, store, and rotate all prepped items following FIFO.
• Monitor and record food temperatures and storage conditions as required.
• Maintain a clean, organized, and sanitary prep area per health regulations and company policies.
• Receive, check, and store deliveries promptly.
• Restock stations, walk-ins, and dry storage for service.
• Communicate shortages, quality concerns, or equipment issues to kitchen leadership.
• Support the line during peak service periods when needed.
• Complete opening and closing duties as assigned.
• Follow safety standards, including knife safety, chemical handling, and PPE.
