Mambo Seafood is a high-volume iconic Houston restaurant brand that has been in business since 1996. Mambo has 12 restaurants in the Greater Houston area, 3 locations in San Antonio, and one franchised operation in the Rio Grande Valley. Mambo Seafood is poised for rapid growth!
Summary:
The Prep Cook assists the Cook in the preparation of various menu items. The Prep Cook must be able to work quickly and efficiently to keep up with the varying food production needs in the kitchen.
Essential Duties & Responsibilities
- Maintains a professional and welcoming attitude while at work.
- Adheres to Company food quality and food safety policies.
- Prepares, washes, peels, and cuts various foods.
- Adheres to the Company’s food production chart for batching, processing and portion prep.
- Weighs or measures ingredients according to the Company’s recipes.
- Stores food in designated containers and storage areas to prevent spoilage.
- Maintains cleanliness of food preparation areas, including all work surfaces and equipment, in accordance with Company food-handling practices.
- Ensures freshness of food and ingredients by checking for quality, tracking shelf life and rotating stock.
- Completes all opening and closing side work related to job duties and other duties as assigned.
Qualifications
EDUCATION & EXPERIENCE
- High school diploma or general education degree (GED) is preferred.
- Must be at least 17 years of age.
- Ability to speak, write and read simple instructions in English.
- Spanish-speaking is a plus, but not required.
- Must have a Food Handler Certificate.
- Must be a team player and customer-service oriented.
- Ability to add, subtract, multiply and divide using whole numbers, common fractions and decimals.
Computer Skills
- Basic computer skills are a plus.
Physical Requirements
- Stands and walks on uneven, slippery, and/or wet surfaces for at least 8 consecutive hours.
- Speaks and listens in-person to staff regarding food and safety matters for at least 8 consecutive hours.
- Reads food safety measuring devices.
- Routinely lifts, stoops, kneels, bends, pushes, and pulls up to 50 pounds, and reaches overhead.
- Routinely carries full service tray.
- Performs work in a varying environment ranging from high to low temperatures and works in wet areas.
- Performs moderately strenuous activity for at least 8 consecutive hours.
- Performs other physical requirements necessary to perform duties and responsibilities.

- Moderate noise, fast pace, high customer traffic and ability to tolerate cleaning solutions regularly.
