Qualifications

• Minimum of 1 year of experience as a professional cutter.
• High-end protein processing experience strongly preferred.
• Working knowledge of production equipment.

Responsibilities

• Cuts beef and pork into primal cuts for further processing or packaging according to customer specs.
• Inspects meat for defects and ensures cleanliness and proper handling.
• Reads and follows customer-specific instructions.
• Maintains QA, HACCP, SQF and safety regulations.
• Weighs cuts on a scale to verify accuracy.
• Performs cutting tests and communicates defects to supervisors.
