The Role
The Oyster Shucker owns a specialized production or cooking station and delivers consistent products through focused technique, preparation, and careful execution.
What You’ll Do
- Prepare, cook, finish, or portion assigned specialty items to recipe and quality standards.
- Shuck oysters safely and efficiently while protecting shell integrity, liquor, temperature, and presentation.
- Set station pars, complete production lists, and maintain readiness for service.
- Monitor texture, flavor, temperature, presentation, yield, and product rotation.
- Use assigned tools and equipment safely and maintain them in clean working condition.
- Communicate shortages, quality concerns, timing issues, and waste promptly.
- Complete setup, sanitation, breakdown, labeling, and closing work thoroughly.

Qualifications
What You’ll Bring
- Relevant restaurant or food-production experience; specialty-station experience is preferred.
- Ability to learn and repeat detailed recipes, techniques, portions, and quality standards.
- Strong organization, sanitation, urgency, and communication.
- Commercial oyster-shucking or raw-bar experience is preferred.
- Food Handler Certification
Physical & Schedule Requirements
- Stand and move for extended periods in a fast-paced kitchen environment.
- Frequently bend, reach, grip, push, pull, and perform repetitive food-preparation motions.
- Regularly lift and carry up to 35 pounds and occasionally up to 50 pounds with assistance when needed.
- Safely work around heat, open flame, steam, sharp tools, wet floors, cold storage, and commercial equipment.
- Maintain availability for a varied schedule that may include early mornings, nights, weekends, and holidays.
