Job summary

Goodwin Recruiting in Charlotte, NC is seeking a Head Artisan Baker to lead the bread program in a new wholesale boulangerie. This hands-on leadership role oversees the overnight team, ensures daily production of artisan loaves for restaurants and wholesale partners, and focuses on quality, inventory, and program refinement.

The facility features dedicated mixing and baking rooms, controlled proofing, and large production ovens.

Qualifications

• Bread from scratch experience at meaningful volume including naturally leavened breads.
• Ability to explain how process changes affect loaf quality (mixing, temp, hydration, fermentation, proofing).
• Experience leading bakers and owning quality and daily execution.
• Comfort with large-scale bakery equipment and hands-on problem solving.

Responsibilities

• Lead overnight bread team through mixing, fermentation, shaping, proofing, and baking.
• Deliver consistent artisan breads and buns at wholesale volume.
• Spot quality issues early, identify causes, and adjust accordingly.
• Lead bread R&D as products and processes are refined for the new facility.
• Manage starter health, production calculations, inventory, and ingredient ordering.
• Train and coach bakers while keeping production on schedule.
