Job summary

MINA Group’s Four Seasons Resort O’ahu at Ko Olina is seeking a Full Time Fish Sommelier with a passion for excellence. You will mentor staff, guide guests with fish knowledge, and help drive sales in an oceanfront setting.

You will collaborate with the culinary team to ensure top-quality fish, manage the fish display setup, train the service team on species and sustainability, and maintain pristine displays for smooth dining room operations.

Qualifications

• Extensive fish and shellfish knowledge.
• Established relationships with fish mongers and fish market/purveyors.
• Excellent basic math skills and ability to operate a POS system and Microsoft based computer systems.
• Previous restaurant or fine dining experience is a plus.

Responsibilities

• Recommends and sells fish and shellfish to guests on the floor, visiting each table prior to ordering.
• Works closely with the Executive Chef to source high-quality fish.
• Acts as ambassador for Mina’s Fish House with local fisherman, markets and purveyors.
• Organizes special guest offerings including line-to-table dinners.
• Conducts continuous fish and shellfish training with the service team and trains new hires.
• Pre-shift briefings and ongoing education on fish species, fishing history and prep.
• Set up and maintain an appealing fish display in pristine condition.
• Daily cleaning and basic maintenance of the fish display and lobster tank.
