Job summary

MINA Group is seeking a Full Time Fish Sommelier for Four Seasons Resort O’ahu at Ko Olina. The role focuses on coaching staff in fish knowledge, delighting guests with informed seafood service, and driving sales in a luxury dining setting.

You will lead fish displays, collaborate with the culinary team to source premium fish, and train new staff to uphold service excellence with aloha spirit.

Qualifications

• Extensive fish and shellfish knowledge.
• Established relationships with fish mongers and fish markets/purveyors.
• Possess excellent basic math skills and ability to operate a POS system and Microsoft based computer systems.
• Experience in fine dining is a plus.
• Previous restaurant or fine dining experience is beneficial.

Responsibilities

• Recommend and sell fish and shellfish to guests on the floor and communicate orders or guest preferences to servers.
• Collaborate with the Executive Chef to source high-quality fish.
• Act as ambassador for Mina’s Fish House with local fisherman and purveyors.
• Promote special guest offerings including line-to-table dinners and on-site seafood experiences.
• Provide continuous fish and shellfish training for service staff and new hires.
• Lead pre-shift meetings and educate the team on fish species, fishing history and preparation.
• Set up an appealing and professional fish display and maintain its pristine condition.
• Perform daily cleaning and simple maintenance of the Fish Display and Lobster Tank.
