Job summary

Dairy Farmers of America is seeking a dedicated operator to support Table, Brine, and RMC operations at our facility in California. The role involves preparing vats, monitoring pH, adjusting cook temperatures, molding cheese, submitting lab samples, and maintaining sanitation and 5S standards.

You will participate in safety training and HACCP plans while ensuring accurate documentation. The position offers competitive pay and benefits with overtime, and requires basic math skills and English

Qualifications

• High School Diploma or GED preferred but not required.
• Must have basic math experience.
• Must be able to read, write and speak English.
• Must be able to work overtime when required.
• Must learn basic computer skills for touch screen operation.

Responsibilities

• Complete all Table Operator duties and responsibilities.
• Complete all Cooker/RMC Operator duties and responsibilities.
• Complete all Loader Operator duties and responsibilities.
• Prepare each vat according to recipe.
• Monitor curd pH's and add ingredients as needed.
• Adjust cheese cook temperatures as needed for different recipes.
• Mold cheese to proper weight and shape.
• Submit sample for lab testing.
• Take representative samples of vats to the lab for testing.
• Maintain good vat separation.
• Monitor the flow of incoming and outgoing cheese.
• Clean brine filters every 2 hours.
• Change RMC molds safely.
• Clean and CIP the Cooker as needed.
• Clean and CIP the Tables as needed.
• Assist the CIP crew as needed.
• Maintain work area up to 5S standards.
• Maintain safe working conditions and compliance with health and safety regulations.
• Adhere to DFA GMP policies and report nonconformity.
• Attend required safety training (GMP, HACCP, SQF).
• Monitor and take corrective actions for critical control points in HACCP.
• Ensure documentation is done correctly and promptly.
