Job summary

Prairie View A&M University is seeking a Meat Science Laboratory Technician to oversee processing of beef, pork, and lamb carcasses and maintain sanitation in the Meat Laboratory. The role supports teaching, research and extension programs under supervision, with focus on safety and quality control.

Required qualifications include a High School diploma and 5 years of related meat industry experience; a Bachelor's in Animal or Food Science is preferred.

Qualifications

• Knowledge of HACCP and FSIS procedures.
• Ability to multitask and work cooperatively with others.
• Ability to harvest and process beef, lamb, and pork.
• Bachelor's degree in Animal or Food Science is preferred; HS diploma required.

Responsibilities

• Assist in maintaining HACCP, SOPs and food safety records. Assist with demonstrations in labs for teaching, research and extension programs.
• Maintain equipment and facilities. Distribute all meat items (packaging, storing, shipping, etc.).
• Fabricate carcasses into roasts, chops, steaks and other standard cuts. Process carcasses from slaughter to cooler. Make sausages, ground meats, cutlets, value-added products and cured and smoked products.
• Assist with demonstrations in labs for teaching, research and extension programs.
• Performs other duties as assigned.
