The Meat Science Laboratory Technician, under general supervision,oversees the processing of beef, pork, and lamb carcasses andmaintains the sanitation of the Meat Laboratory.

This position is funded by a grant or restricted funds.Continued employment is contingent on the renewal of grant orrestricted funding.

The salary is determined in accordance with the University’scompensation structure and will be commensurate with thecandidates’ education and experience, within the assigned salaryrange for this position.

Responsibilities:
  • Assist in maintaining HACCP, SOPs and food safety records.Assist with demonstrations in labs for teaching, research andextension programs.

  • Maintain equipment and facilities. Distribute all meat items(packaging, storing, shipping, etc.).

  • Fabricate carcasses into roasts, chops, steaks and otherstandard cuts. Process carcasses from slaughter to cooler. Makesausages, ground meats, cutlets, value-added products and cured andsmoked products.

  • Assist with demonstrations in labs for teaching, research andextension programs.

  • Performs other duties as assigned.

Required Education and Experience:
  • High School diploma or equivalent combination of education andexperience.

  • Five years of related experience in the meat industry.

Required Knowledge, Skills, and Abilities:
  • Knowledge of Hazard Analysis and Critical Control Points(HACCP) and Food Safety and Inspection Service (FSIS)procedures.

  • Ability to multitask and work cooperatively with others.

  • Ability to harvest and process beef, lamb, and pork.

Preferred Qualifications:
  • Bachelor’s degree in Animal or Food Science or closely relatedfield

  • Six years of related experience in the meat industry

  • Previous university meat production facility experience ormeats judging experience is a plus
