Job summary

Jobot is seeking a Production Supervisor for our food manufacturing operations in California. You will supervise daily production of retail beef and/or pork cuts, ensure safety, quality, yield, and throughput targets, and coach hourly teams.

You will oversee meat fabrication from primal to subprimal to retail cuts with a focus on minimizing trim loss, ensuring MAP packaging integrity, and maintaining audit-ready GMP/HACCP-compliant operations.

Qualifications

• 3+ years of supervisory experience in meat processing (beef and/or pork).
• Hands-on knowledge of primal/subprimal cuts and retail meat fabrication.
• Experience managing yield, waste reduction, and trim optimization.
• Experience in USDA-regulated environments and MAP packaging.

Responsibilities

• Supervise daily production operations focused on beef and/or pork cuts.
• Lead, coach, and develop hourly production teams.
• Oversee meat fabrication processes from primal to retail cuts.
• Drive yield performance, monitor waste, and implement corrective actions.
• Ensure MAP seal integrity and correct gas ratios.
• Enforce GMP, HACCP, and food safety standards.
• Collaborate with QA, Maintenance, and Sanitation to resolve issues.
• Drive performance via KPIs, labor planning, and scheduling.
• Identify and implement continuous improvement initiatives.
• Ensure accurate production reporting and shift handoffs.
