Qualifications

• Able to follow detailed production procedures and SOPs.
• Strong focus on food safety and quality.
• Comfortable working in a fast-paced meat production environment.
• Basic math and record-keeping skills.
• Prior meat processing or food manufacturing is a plus (training provided).

Responsibilities

• Load meat tanks onto stuffing equipment and prepare product for production runs.
• Monitor appearance, casing integrity, and consistency of products.
• Tie knots on natural casing products to ensure portion integrity.
• Transfer and hang finished product onto racks for further processing.
• Assist with casing prep and supply monitoring during production.
• Maintain accurate production, lot, and quality records.
• Follow SOPs, GMPs, USDA/FSIS regulations, and food safety requirements.
• Participate in food safety, HACCP, GMP, and safety training programs.
• Perform sanitation and housekeeping duties after production.
• Keep work areas clean, organized, and safe.
