The ideal candidate brings advanced butchery skills, strong leadership, and extensive knowledge of premium meats, with a focus on safety, inventory, and pricing integrity.

Qualifications

• 2–3 years meat department management or supervisory experience in grocery, butcher shops, or specialty food retail.
• Advanced butchery and knife skills, including cutting, trimming, deboning, and portioning meat.
• Extensive knowledge of premium meat cuts, quality standards, storage, and rotation.
• Experience with inventory management, ordering, merchandising, shrink control, and profitability.
• Ability to lead, train, motivate, and develop a team.
• Strong guest service, communication, organizational, and problem-solving skills.
• Knowledge of food safety, sanitation, and temperature-control requirements.
• Ability to analyze sales, inventory, and labor performance to inform decisions.
• Proficiency with basic computer applications including email, spreadsheets, and scheduling systems.
• Ability to work independently, prioritize, and maintain high standards in a fast-paced environment.

Responsibilities

• Lead, train, coach, and develop meat department staff.
• Oversee daily department operations, staffing, scheduling and opening/closing procedures.
• Deliver exceptional guest service with product recommendations and special requests.
• Prepare, trim, debone, cut, portion, package, weigh, and price meat per quality standards.
• Manage product ordering, receiving, inventory, and rotation for freshness and stock.
• Inspect deliveries, verify invoices, ensure quality standards.
• Maintain attractive, well-stocked displays with accurate signage and pricing.
• Monitor sales, labor costs, shrink, waste, and inventory performance.
